With the Einkorn baking mix from Chiemgaukorn you can bake about 20 fragrant and aromatic muffins. The contained spices cinnamon, cardamom and turmeric provide a pleasant feeling and can stimulate the metabolism.
All the cereals that Chiemgauer Manufaktur uses for its baking mixes are grown on its own organic fields in Chiemgau. The einkorn used in this baking mix is one of the oldest cultivated cereals. It has a slight yellow color due to its high beta-carotene content and tastes slightly sweet and nutty, which harmonizes perfectly with the spices used here. Tartar baking powder is used for the rising of the muffins, which, unlike conventional baking powder, does not need any additional acidifier. Here, the leavening agent is activated by the tartar produced during winemaking.
To the mixture add only 150g butter/coconut fat/margarine, 250ml (vegetable) cream and 125ml (vegetable) milk. Instead of muffin tins, you can of course put the batter in a springform pan or on a baking sheet and adjust the baking time if necessary.
