We have long puzzled over what to call this absolutely new and unique product. It is a relatively fine powder that tastes like olives. No wonder, because it is made from olives. Kalamata olives to sprinkle? Dried olive tapenade? OEL dust!
For the OEL dust, Kalamata olives are pitted, marinated in vinegar, dried and then crushed, resulting in a spreadable, very aromatic olive powder.
OEL dust is excellent for refining all kinds of dishes. Let your imagination run wild! Sprinkle OEL dust on buttered bread, salad or herb curd. Stir OEL dust into dressing or bread dough. Mix OEL dust with OEL and drizzle the mixture over your vegetables. Experiment!

Our OELstaub with its three ingredients comes very close to this idea. The OEL dust from Kalamata olives contains only the most necessary ingredients to make the Kalamata olives edible and durable: salt and vinegar.
Like all OEL products, OELstaub from Kalamata olives does not contain flavor enhancers, flavorings, preservatives, colorings or sugar, and in this case even herbs and spices.

Manufacturing process of our products from olives
The Kalamata olives for our olive products grow and thrive on exclusively certified organic trees in the Peloponnese, Greece. From these same trees, they are harvested by hand in a gentle but sweaty process, and then packed into crates and taken to processing facilities. During harvesting and processing, the protection of the fruit is a top priority. This is the only way to preserve the full flavor.
At the processing plants, the olives are then sorted by variety and size, moved via conveyors to be washed, and then stored in large tanks of brine for debittering. Without this process, olives are inedible. The olives ferment for about six months before being further processed. Only at the end the olives are marinated in vinegar or with herbs.
The OEL dust is then dried and crushed.
