The 180g jar filled with single variety paste made from certified organic Kalamata olives. Refined with native varietal self-produced certified organic Koroneiki extra olive oil, fine salt, garlic, oregano and vinegar.
The Kalamata and Chalkidiki olives for our olive products grow and thrive on exclusively certified organic trees in the Peloponnese, Greece. From these same trees, they are harvested by hand in a gentle but sweaty process, and then packed into crates and taken to processing facilities. The working methods during harvesting and processing are always subordinated to the protection of the fruit and thus to the preservation of the variety of flavors of the green and dark purple olives.
In the processing plants, the olives are then sorted by type and size, transported by conveyors for washing, and then stored in large tanks. These tanks are additionally filled with a special brine. The process called fermentation of olive products in brine is then maintained for about six months. After this time, the olives are selected again and thus controlled. Finally, the olives are refined with spices and filled into our jars.
