Distiller Erich is responsible for this fine pear brandy, the grandfather of Jessica, one of the four founding members of Stilvol Manufactory. He hand-pots sugar-sweet pears in Williams Christ pear brandy at the distillery on his farm in Baden-Württemberg, where they can release their fine aroma and fruity sweetness to the alcohol over many months. The long maturation period is the reason why this type of liquor is often called “Old Williams”. The name “Williams Christ” refers to both the pear variety used and the spirit produced from it, which in this case has an alcohol content of 36% by volume. has. Unlike Stilvol’s garden raspberry brandy, for example, Golden Pear is a spirit, not a brandy. This distinction is based on a step in the manufacturing process: While in the case of brandy, mash is made from fermented fruit and then distilled, in the case of Geist, the fruit is steeped in neutral alcohol. In the first variant, therefore, all the alcohol contained in the spirit is produced from fermented fructose. However, since not all fruits contain as much sugar as the pear, not all fruits are equally suitable for this method, and are therefore soaked in externally supplied alcohol to extract the intense flavors from the fruit.
For the aromatic golden pear, Stilvol provides us with a fine recommendation, the Golden Sour. For this you will need:

– 4cl fresh lemon juice
– 2TL powdered sugar
