A mustard with licorice flavors – definitely one of the more unusual varieties of Hamburg mustard Pauli Manufaktur. The syrup used here is made from the root of the licorice plant, which is used to produce licorice, a sweet that is particularly popular in northern Germany and coastal regions. The absolute leaders in enjoying licorice are the Dutch, but nations in the European north are also big fans of the black treat. While only licorice juice, also known as raw licorice, is used in the “Zappenduster” mustard, the production of classic licorice sweets involves the addition of sugar and binders, as well as, depending on the region and preference, the tangy salmiak salt.
The taste associated with licorice comes from the glycyrrhizinic acid contained in it, the splitting of which produces calcium and potassium salts, which provide a certain bitterness, on the one hand, and the sugar glycyrrhizin, which has fifty times the sweetening power of household sugar from sugar cane or sugar beet, on the other. The typical light taste of aniseed comes from anethole, which can also be extracted from star anise or fennel, for example. Licorice is primarily grown in Iran, where the lateral roots of the licorice can only be harvested every three years. First, the roots are cut off mechanically on both sides, after which they must be pulled out of the soil by hand and processed further. It is crucial that the roots are kept dry both during the harvesting process and in subsequent processes.
Due to its special flavors, the “Zappenduster” mustard goes perfectly with smoked meat and fish, strong cheeses and fennel dishes.

Mustard Pauli make their mustard according to ancient tradition. The mustard seed is cold ground, which completely preserves the essential oils of the seed, which is beneficial to both the taste and nutritional value of the product. In addition, the oil contained in the grains is not extracted by pressing during processing, which keeps the mustard as natural as possible. The manufactory relies primarily on ingredients that come from the region around Hamburg or from Germany in general, in order to keep transport distances short.
