Cereal risotto. Familiar dish in a new guise
The popular Bavarian rice from Chiemgaukorn meets here Shiitake mushrooms from German cultivation as well as vegetables and herbs from Bavaria. The cereal rice base consists of pearl emmer, pearl einkorn and pearl spelt, all species that have a high mineral and nutrient content and contain a lot of protein. At Chiemgaukorn, we only produce cereal products that include varieties from our own organic fields in Chiemgau. Sustainable field cultivation, i.e. a crop rotation that ensures biodiversity, is particularly close to the manufactory’s heart.
Emmer, which is also known as Zweikorn, and Einkorn are among the oldest cultivated cereals. Einkorn has a slightly yellowish color due to its high beta-carotene content and also tastes sweet and nutty. By roughening the outer layer, so-called pearl grain can dispense with soaking the grain before preparation, as the water can be absorbed better and faster during cooking.
And this is how the primal grain risotto is prepared: The grains are cooked for 20 to 25 minutes with 1.5 parts and 2 parts of water or broth, respectively; with less liquid, the grains become rather firm to the bite, with more, rather soft. First boil the cereal, then close the lid and simmer over low heat until cooked. Season to taste and deglaze with white wine to taste, add fresh vegetables or mushrooms or sprinkle with Parmesan cheese. This will give you two to three servings of delicious mushroom risotto.

Spelt, emmer, einkorn, shiitake mushrooms (5%), vegetables and herbs (tomatoes, carrots, peppers, celeriac, onions, parsnips, garlic, parsley, lovage), rock salt.
