Sharp-tongued. Not for the faint of heart
Unlike many of the other Mustard Pauli creations, this one uses only black mustard seeds, which makes the mustard much spicier at the end. Unlike that of chili peppers, however, this type of spiciness does not burn the tongue as much as it does the nose. This is due to the so-called allyl mustard oil, which gets into the nasal mucosa and irritates it when smelling mustard or horseradish, for example. However, the mustard oil quickly loses its effect due to the fresh air that follows. It’s a different story with habanero chilies, which make a guest appearance in this mustard: The capsaicin they contain activates heat receptors in the mouth that transmit pain signals to the brain.
One would think such remarks about pain while eating would have no place in a description of a delicious food that one would like to recommend to someone. Far from it, a mustard called “test of courage” naturally deserves such an introduction. The habanero chilies that Mustard Pauli uses are a solid 280,000 on the Scoville scale. The Scoville unit is used to measure the heat level of peppers. For example, a plain vegetable bell pepper is 0-10 Scoville, Tabasco is 2,500-5,000, and a pod of the Carolina Reaper chili variety is over 2,000,000! Compared to the latter, the Habaneros, with their 280,000, don’t seem quite as overwhelming, but don’t be fooled: The habanero is one of the hottest chilies in the world, so it’s not for the faint of heart or pain receptors.
The mustard Pauli “test of courage” fits infinitely many dishes. Experiment cheerfully, but with caution!
Quality feature. Gentle production
“Senf Pauli” make their mustard according to ancient tradition. The mustard seed is cold ground, which completely preserves the essential oils of the seed, which is beneficial to both the taste and nutritional value of the product. In addition, the oil contained in the grains is not extracted by pressing during processing, which keeps the mustard as natural as possible. The manufactory relies primarily on ingredients that come from the region around Hamburg or from Germany in general, in order to keep transport distances short.
