For our OELstaub Grün, green olives are pitted, dried with garlic, bucovo and coriander and then crushed to produce a sprinkleable, very aromatic olive powder.

Bukovo and our OEL dust
Our green OLESTAUB is seasoned with bukovo. This is a spicy bell pepper variety from Macedonia. It was already almost extinct, but fortunately is now experiencing a small renaissance. The spiciness and aroma of Bukovo harmonize perfectly with garlic and the slightly bitter fleshy Chalkidiki olives. That is why we use Bukovo in our green OEL dust and in our green GRILLOELiven
Like all OEL products, OELstaub Grün does not contain flavor enhancers, artificial flavors, preservatives, colorants or sugar. At OEL you will find the pure variety of natural taste.

Manufacturing process of our products from olives
The green olives for our olive products grow and thrive exclusively on certified organic trees in Greece. From these same trees, they are harvested by hand in a gentle but sweaty process, and then packed into crates and taken to processing facilities. During harvesting and processing, the protection of the fruit is a top priority. This is the only way to preserve the full flavor.
In the processing plants, the olives are sorted by variety and size, transported by conveyors to be washed, and then stored in large tanks with brine for debittering. Because without this process olives are inedible. The olives ferment for about six months before being further processed. Only at the end the olives are marinated in vinegar or with herbs.
For OEL dust, two further processing steps then follow: drying and crushing into granules.
