Harvest time. Old apple, good mustard
Old apple varieties from the Alte Land near Hamburg are freshly pressed for the “Not Far from the Tribe” mustard in the jar, to which a nice dash of apple cider vinegar is added. The use and cultivation of ancient fruits and vegetables hold some advantages both for nature and for all those who end up consuming the products. Modern breeding is designed to make the fruit as long as possible and resistant to pathogens, from which the taste pallet suffers. In addition, significantly more people react with allergies to conventional breeding. The difference in tolerance is due to so-called polyphenols, which are found in high amounts in and under the skin of old apple varieties. However, since these are also responsible for the apple turning brown after cutting, they have been bred out of the varieties sold in supermarkets today. There are around 2,000 different apple varieties in Germany, of which only a small fraction make it to the stores. All the nicer that “Senf Pauli” helps themselves to the rich selection in their area!
This fruity mustard creation tastes great with pork, maties, potato pancakes and nut tofu.
Quality feature. Gentle production
“Senf Pauli” make their mustard according to ancient tradition. The mustard seed is cold ground, which completely preserves the essential oils of the seed, which is beneficial to both the taste and nutritional value of the product. In addition, the oil contained in the grains is not extracted by pressing during processing, which keeps the mustard as natural as possible. The manufactory relies primarily on ingredients that come from the region around Hamburg or from Germany in general, in order to keep transport distances short.
