Floral. Warm days preserved in mustard
Flowers that are picked by hand in northern Germany and honey that bees also diligently produce in the north of the republic – these treasures find their way into the jar at Senf Pauli together with white and black mustard seeds. You can taste the aroma of the cornflower, called Kuurnbloom, Roggenblom or Tremse in Low German, depending on the region. The blue flower grows particularly readily and well on sandy or clay soils, for example, also on the edges of grain fields, hence its name. It is considered an excellent bioindicator, meaning that it is able to indicate fluctuations in soil quality or environmental impacts such as fertilizer use through increased or decreased occurrence. Its botanical name Centaurea cyanus has its origin in Greek mythology and refers to the healing of the wounded hero Achilles by the centaur Chiron. Today, the cornflower is a protected species and a generous source of nectar for bees. For the “Bienen un Blomen” mustard only the leaves of the cornflower are used, the calyx is unsuitable for consumption due to its own bitter taste.
Due to its mildness, this mustard creation comes into its own especially in combination with poultry, in salad dressings or with sheep’s or goat’s cheese.
Quality feature. Gentle production
“Senf Pauli” make their mustard according to ancient tradition. The mustard seed is cold ground, which completely preserves the essential oils of the seed, which is beneficial to both the taste and nutritional value of the product. In addition, the oil contained in the grains is not extracted by pressing during processing, which keeps the mustard as natural as possible. The manufactory relies primarily on ingredients that come from the region around Hamburg or from Germany in general, in order to keep transport distances short.
