Hybrid. Oriental versatility
The girls from Senf Pauli didn’t want to be pinned down to a culinary category with this mustard and created a mustard that strongly resembles a fruity and sour chutney. Figs preserved in white wine, sugary raisins and a stimulating blend of spices were added to this mustard made from black and white mustard seeds. A choice that, in view of the name of the mustard, of course, has not happened by chance. In oriental cuisine, raisins are often used in savory-spicy recipes, as the sweetness of the fruit creates a wide-ranging flavor profile. The figs used, which originated in the Orient but are now also grown in regions around the Mediterranean, are also frequently used in oriental dishes, lending them an unobtrusive sweetness. There are probably few fruits that are charged with more meaning on a symbolic level than the fig. In the Bible, Adam and Eve covered themselves with fig leaves in the Garden of Eden, the Romans dedicated the fruit to the god of wine, Bacchus, the Greeks to Dionysus, creating an association with exuberance and intoxication. In addition, the fig is associated with prosperity, sensuality and fertility. The fruit we call a fig is not a real fruit at all, but a pseudo-fruit. The actual fruits are the tiny yellow seeds that lie softly embedded in the flesh.
Regardless of which symbolic meaning one considers the most expressive or whether one explicitly insists on the correct designation of the fig as a pseudo-fruit, Mustard Pauli succeeds with “Murder in the Orient” in creating an extremely aromatic product that goes extremely well with cheese, game and with fondue.

Mustard Pauli make their mustard according to ancient tradition. The mustard seed is cold ground, which completely preserves the essential oils of the seed, which is beneficial to both the taste and nutritional value of the product. In addition, the oil contained in the grains is not extracted by pressing during processing, which keeps the mustard as natural as possible. The manufactory relies primarily on ingredients that come from the region around Hamburg or from Germany in general, in order to keep transport distances short.
