Specialty. Sound of the sea from the depths
You don’t put mustard on your bread every day with salt from the ancient sea, which is 220 million years old. All those years ago, the unfolding of two layers of the earth during an incomplete volcanic eruption caused a small part of the so-called primordial ocean to get between the two layers. Thus, the liquid was collected in a kind of cavity at a depth of 800 meters and thickened due to the heat emanating from the volcano, but without crystallizing. With this salt, which is processed in liquid form in Lower Saxony, the Hamburg manufactory has created the mustard specialty “Green Waves”. Refined additionally with flavor-intensive herbs and fresh, pureed garlic. The combination of these ingredients creates a mustard that convinces with its simplicity, but still does not leave out that certain something.
Perfect companions for the green waves are all kinds of meat, (vegetable) roasts and tomatoes.
Quality feature. Gentle production
“Senf Pauli” make their mustard according to ancient tradition. The mustard seed is cold ground, which completely preserves the essential oils of the seed, which is beneficial to both the taste and nutritional value of the product. In addition, the oil contained in the grains is not extracted by pressing during processing, which keeps the mustard as natural as possible. The manufactory relies primarily on ingredients that come from the region around Hamburg or from Germany in general, in order to keep transport distances short.
