Farm Bread. Original and tasty
Chiemgaukorn supplies us with the ready-made organic mix for this slightly spicy and rustic farmhouse bread. On the basis of Bavarian rye flour and the original spelt used by the manufactory, together with sourdough extract, barley malt, bread spices and rock salt, a bread with a crispy crust and soft crumb can be created just like from the baker. To the baking mixture only need to add water and yeast.
Every type of grain used by Chiemgaukorn in its products comes from its own organic fields in Chiemgau. The manufactory relies on sustainable field cultivation, which means a crop rotation that ensures biodiversity. From the field to the packaging, the grain is treated with dedication and processed by hand, but additives such as preservatives or flavor enhancers never find their way into the bag.
Rye and original spelt. It all depends on the flour
In this baking mix rye flour type 1370 is used, which means it contains 1370 milligrams of minerals per 100 grams of flour. The higher the value of the type, the higher the mineral content and the more coarse-grained the flour, which is why type 1370 is particularly well suited for sturdy breads like this one. The rye flour is mixed with type 1050 original spelt flour, a type often used in mixed breads. As the name of the flour suggests, it is not standard spelt flour, but a special variety of the grain. The grain we know today as spelt is a cross between the original spelt and wheat. The reason for crossing is greater yield and better stability of the grain. “Pure” spelt, i.e. “primal spelt”, is a cross between the cereals Emmer and Einkorn and wild grass. Hildegard von Bingen, a natural scientist, attributed numerous positive properties to cereals. Flour from this grain has a high mineral content and is considered highly digestible. This effect in farmhouse bread is supported by selected bread spices such as fennel and caraway, which create a delicate aroma.
