Primal Grain Curry. Bavaria meets India
Bavarian curry – already the name arouses culinary interest. First of all, it is a mix of different cereals such as original spelt and emmer. The former, unlike the grain known today as spelt, was not crossed with wheat, but is the original form of the grain, a cross between the cereals Emmer and Einkorn and wild grass. For modern agriculture, this original form was crossed with wheat in order to achieve greater yields and to be able to grow a cereal with better stability. In this way, however, minerals and other nutrients have been lost, but they are still present in the original spelt. Even the naturalist Hildegard von Bingen attributed numerous positive properties to the grain. In addition to its high mineral content, the grain is also characterized by its good digestibility.
The emmer used in Bavarian curry can also boast a high content of minerals, and it is also an excellent source of protein. Emmer is also called Zweikorn and is one of the oldest cultivated cereals along with Einkorn, which is also included in this blend. Einkorn has a slightly yellowish color, which is due to the high content of beta-carotene, and tastes sweetish-nutty.
Lentils and buckwheat. From the Chiemgau
The manufacture Chiemgaukorn relies in its production exclusively on cereals from its own organic fields in Chiemgau, the same applies to the Beluga lentils used in the curry, which are incidentally named after the caviar of the same name due to the visual similarity, and the buckwheat, which despite the name is not a cereal, but a knotweed plant.
The Bavarian Curry Mix is refined with a wide variety of vegetables and stimulating spices such as ginger and turmeric, as well as mustard and mother cumin, to achieve a culinary fusion of Bavaria and India. To prepare it, all you need is a can of coconut milk, water or cream, and after 25 minutes you have a wholesome yet flavorful meal for three to four people on the table.
